At Texas Iberico, we tip our hats to the noble Spanish Iberico Pig and the amazing meat this historical animal produces. To make our items Truly Texan, we then created recipes using ingredients that are native to the Lone Star State.
Our Texas Iberico Spicy Chorizo is cured for 45 days and then gently smoked with Pecan wood.
Aroma and Taste:
Texas Iberico pork naturally has a nutty, yet mildly sweet aroma, due to its diet and historic breed. Also present are scents of pecan wood and Sherry.
Spanish Sherry (traditionally used in Spanish Chorizo) excites the nose and palette with lively acidity and fermented fruit. This is balanced with warming spices and umami that finishes smooth, but is not quickly forgotten.
Texas Iberico™ was established in 2018 by owners Tim Harris, CEO of La Tienda, and Ashly Martin, a third-generation cattle rancher and owner of Trails End Ranch. Their line of cured Iberico pork products are produced only from Iberico pigs raised completely out of doors on partner Ashly Martin’s ranch in Menard, Texas.
