Zwïta was founded out of a long-time frustration with the lack of Tunisian culinary representation in the United States where certain foods seem to have to be diluted to "Middle Eastern" or "Mediterranean" in order to feel worth putting forward. This is upsetting because there is so much unique and ancestral deliciousness to experience when you delve into a culture’s culinary ways.
